Enjoy a stunning Bush Tucker Lunch prepared by one of Noosa’s most celebrated chefs and cookbook author, Nilla Tomkins of Vanilla Food beginning and ending with specially-crafted cocktails created by the award-winning Sunshine & Sons and Nil Desperandum Rum for an INspiring afternoon of fascinating conversation and bush tucker cuisine.
Guest will be welcomed with a bespoke botanical cocktail using native ingredients and Sunshine & Son’s Vodka that was recently voted the “World’s Best!” before being treated to a stunning Bush Tucker Feast including starters of Wallaby Tartare with crispy salt bush, housemade crackers and emu mayonnaise; Betel leaf with Chili Prawns bush tomato, macadamia Cream and Finger Lime. Mains will include Whole roasted Cauliflower, with roasted wattle seeds, bush honey miso tahini; Papaya salad with native herbs; Roasted Eggplant with native greens & bush chilli and date caramel sauce; Whole Wild caught Fish with bunya nut & saltbush dukkah; and Housemade GLUTEN-FREE Smoked Damper with macadamia butter!
Chef Nilla and distiller Matt Hobson will share their stories between courses, culminating with an interactive Q&A session and giveaways before adjourning to Vanilla Food’s Kitchen Garden gazebo for Native Tiramisu dessert together with a small batch organic spiced rum from Nil Desperandum, Australia’s only certified organic rum.
Additional cocktails and Australian organic natural wines, craft beer and kombucha will be available for purchase.
